My “GO-TO” soup recipe is hands down…”Mom’s Pumpkin Soup”.  This recipe reminds me of home and is like a warm hug on a cold day!   Thanks for sharing the recipe Mom 🙂

 

Directions:

Sauté one medium chopped onion

add 1tsp of crushed/grated ginger

sauté 2-3!more minutes

Add 1.5-2lbs of chopped pumpkin chunks.

Cook for 3-4 minutes.

Add salt to taste

Add 1/2tsp black pepper

Add 1tsp corrander powder

Add 1 small piece of cinnamon stick

Add vegetable broth

Cover & cook (I do mine in instapot) for about 30-40min.

Take cinnamon stick out & purée the soup.

Add 2-3 tbsp of heavy cream (35%).

Serve with some toasted pumpkin seeds
